Turai ki sabji, jo ridge gourd curry ke roop mein bhi jani jati hai, ek swadisht Bharatiya dish hai jo iss aam sabzi ke ubharte hue flavors aur textures ko pradarshit karti hai. Turai Ki Sabji – Ingredients:

Turai ki sabji banane ke liye, aapko nimn likhit samagri ki zaroorat hogi:

– 2 medium size ridge gourds (turai)

– 2 tablespoon tel

– 1 teaspoon jeera

– 1 pyaaz, barik kata hua

– 2 tamatar, barik kata hua

– 2 hari mirch, lambai mein kaati hui

– 1 teaspoon adrak-lehsun ka paste

– 1/2 teaspoon haldi powder

– 1 teaspoon dhaniya powder

– 1/2 teaspoon lal mirch powder (swad anusar badhaye ya kam kar lein)

– 1/2 teaspoon garam masala

– Namak swad anusar

– Taja dhaniya patti, sajane ke liye

Instructions:

1. Sabse pehle, ridge gourds ko chhilkar unki sakht outer skin nikal dein. Unhe lambai ke hisab se patle, barabar tukdon mein kaat lein.

2. Ek kadhai ya patile mein tel ko medium aanch par garam karein. Usmein jeera dalein aur unhein kuch seconds tak bhunein, jab tak unka sugandhit swad na aaye.

3. Ab usmein barik kata hua pyaaz dalein aur use sunahra hone tak bhunein. Iss se curry mein ek halka meetha swad aayega.

4. Kadhai mein adrak-lehsun ka paste aur lambai mein kati hui hari mirch dalein aur ek minute tak bhunein, jab tak kaccha swad khatam na ho jaye.

5. Ab usmein barik kata hua tamatar shamil karein aur unhein naram aur guchhe huye hone tak pakayein, curry ke liye ek sugandhit base taiyar karne ke liye.

6. Ab masale daalein. Haldi powder, dhaniya powder, lal mirch powder aur namak curry ke mishran par chhidk lein. Acche se milayein, taki masale uniform roop se phailein.

7. Savdhani se ridge gourd ke tukde ko kadhai mein shamil karein aur masalon se achhe se coat karein. Aanch ko halki kar dein, kadhai ko dhak kar rakhein aur 10-15 minute tak masalon ko milne dein. Ridge gourd apna prakritik taral chhod degi, jisse ek rasila curry banta hai.

8. Jab ridge gourd naram ho jayein, kadhai ka dhakkan hata dein aur aanch ko thoda badha dein. Curry ko kabhi-kabhi hilate rahein, jisse anya taral kaapne aur flavors gehre ho sakein.

9. Garam masala curry par chhidk dein, jisse ek sugandhit dhakka milega. Swad ki janch karein aur zarurat padne par namak aur masalon ka sahi istemal karein.

10. Turai ki sabji ko ek sajane wale bartan mein transfer karein, taze kata hua dhaniya patti se sajayein aur garam-garam roti, chawal ya apne pasand ki kisi bhi roti ke saath serve karein.
