Sewai kheer, jo vermicelli pudding ke naam se bhi jaani jati hai, ek prasiddh aur dilkash Indian mithai hai, jise tyoharon, utsavon mein ya bas meetha khane ke liye istemal kiya jata hai. Sewai kheer – Samagri:
– 1 cup bhuni hui vermicelli
– 4 cup doodh (poora doodh)
– 1/2 cup chini (as per taste)
– 1/4 chammach elaichi powder
– Thoda sa kesar
– 2 tablespoon ghee (clarified butter)
– Dry fruits (badam, kaju aur pista), tukde karke
– Kishmish garnishing ke liye
Vidhi :
1. Ek moti tawi ya gehri kadhai garam karein aur usme ghee dalein. Ghee ko dhimi aanch par garam hone dein.
2. Jab ghee garam ho jaye, usme vermicelli dalein. Use ghee mein bhure rang tak bhunein. Jalte hue na hone ke liye lagatar hilate rahein.
3. Jab vermicelli sundar bhure rang ki ho jaye, usme doodh daalein. Doodh ko vermicelli se acchi tarah milayein.
4. Doodh ko dhimi aanch par ubaal aane dein. Aanch ko kam kar dein aur vermicelli ko doodh mein pakne dein. Kabhi kabhi hilate rahein, taaki vermicelli chipke na.
5. Jab vermicelli naram ho jaye aur doodh gaadha ho jaye, usme chini milayein. Chini ko poori tarah gholne ke liye acchi tarah milayein.
6. Ab elaichi powder aur kesar vermicelli mein daalein, jisse kheer mein unki sugandh aaye. Halki halki milayein.
7. Kheer ko dhimi aanch par pakate rahein, takriban 15-20 minute tak, jab tak vermicelli poori tarah pak jaye aur doodh gadha ho jaye. Chipakne se bachne ke liye kabhi kabhi hilaate rahein.
8. Is dauran, ek alag chhoti tawa lein aur usme ek chammach ghee garam karein. Usme tukde kiye huye dry fruits (badam, kaju aur pista) daal kar unhe halka bhura hone tak bhunein. Garnishing ke liye alag rakh dein.
9. Jab vermicelli pak jaye aur kheer ichhait consistency tak pahunche, gas band kar dein.
10. Sewai kheer ko garam ya thanda individual bowls mein serve karein. Har serving par sauté ki dry fruits aur kuch kishmish garnishing ke liye rakhein.
