– 1 chammach jeera
– 1 chammach haldi powder
– 1 chammach lal mirch powder (apne mirch ke swad anusar pramanit karein)
– 1 chammach dhaniya powder
– 1/2 chammach garam masala powder
– Namak swad anusar
– Taze dhaniya patti, bareek kata hua (sajane ke liye)
– Tel ya ghee bhunane ke liye
Instructions:
1. Madhyam aanch par ek chammach tel ya ghee ko ek kadai mein garam karein. Usmein jeera dalein aur use phoolne tak chhod dein.
2. Kadai mein kata hua pyaaz dalein aur use sunahra hone tak aur translucent hone tak bhunein.
3. Kadai mein adrak-lasoon ka paste aur hari mirch dalein. Ek minute tak bhunein jab tak kachha khusbu khatm na ho jaye.
4. Tamatar ka puree kadai mein dalen aur achhe se milaye. Mixture ko kuch minute tak pakayein jab tak tel alag hone lage.
5. Ab kadai mein haldi powder, lal mirch powder, dhaniya powder aur namak dalein. Masalon ko tamatar-pyaaz mixture ke saath achhe se milayein aur kuch minute tak pakayein, taaki masale acche se mil jayein.
6. Dhyan se paneer ko masalon ke saath kadai mein milayein. Chalate waqt paneer ke tukde na tut jayein.
7. Kadai ko dhak dein aur paneer ko masalo mein 5-7 minute tak pakayein, taaki wo swad aur masalo ko acche se absorb kar sake.
8. Iske baad paneer par garam masala powder chhidak dein aur use ek baar acche se milayein. Gravy ki consistency ko jarurat ke anusar pani dal kar prabandhit karein.
9. Paneer ki sabji ko kuch aur minute tak dhimi aanch par pakayein taaki flavors acche se ghul jayein aur paneer puri tarah se pak jaye.
10. Jab taiyar ho jaye, sabji ko taze dhaniya patti se sajayein. Isse uski sugandh aur nazakat aur badh jayegi.
