Mushroom Ki Sabji – Samagri:
– 500 gram taza mushroom, saaf kiye aur kaat liye
– 2 medium size pyaaz, bareek kata hua
– 2 tamatar, pees liye
– 2 hari mirch, lambai mein kat di gayi
– 2 chammach adrak-lehsun ka paste
– 1 chammach jeera
– 1 chammach dhaniya powder
– 1/2 chammach haldi powder
– 1/2 chammach lal mirch powder (aapke swad anusaar matra ko badhayein ya kam kar dein)
– 1/2 chammach garam masala
– 1/4 cup taaza dhaniya patti, bareek kata hua
– 2 tablespoon cooking oil
– Namak swad anusar
Vidhi:
1. Ek kadai mein tel garam karein aur medium aanch par jeera daal dein. Jab jeera phute aur phulayein toh aanch ko dhimi kar dein.
2. Bareek kata hua pyaaz daal dein aur tab tak bhunein jab tak vah sunehra na ho jayein.
3. Ab adrak-lehsun ka paste aur kata hari mirch daal dein. Ek minute tak bhunein jab tak kaccha swad khatam na ho jaye.
4. Tamatar ka paste daal dein aur tab tak pakayein jab tak tel alag na ho jaye. Yeh batayega ki tamatar achhe se pak gaye hain.
5. Ab masalon ka samay hai! Haldi powder, lal mirch powder, dhaniya powder aur namak chhidak dein. Achhe se milayein aur masalon ko masale ke ander samaan dein. Ek minute ke liye pakayein taki masale acche se sabji mein ghul jayein.
6. Mushroom kaat kar dalein aur sab kuchh achhe se milayein, dhyan rakhein ki mushroom masalon se achhe se coat ho jayein. 3-4 minute tak pakayein jab tak mushrooms apna pani chhodne na lagein.
7. Aanch ko kam kar dein, kadai ko dhak dein aur mushroom ki sabji ko 10-15 minute tak dhimi aanch par pakayein. Yeh masalon ko achhe se ghulne aur mushroom ko naram hone ka samay dega.
8. Dhakkan hatayein, aanch ko medium par badhayein aur kuchh aur 2-3 minute tak pakayein taki adhik se adhik pani uchhal jaye.
9. Garam masala chhidak dein aur sabji ko ek aakhiri baar acche se milayein. Swad anusaar namak ka test karein aur swad ko sahi karein, agar zarurat ho toh.
10. Aanch band karein aur taja kata hua dhaniya patti se sajayein.
