– 1 teaspoon haldi powder (turmeric powder)
– 1 teaspoon lal mirch powder (red chili powder)
– 1 teaspoon dhaniya powder (coriander powder)
– 1/2 teaspoon garam masala
– Namak swaad anusar
– Taja dhaniya patti (fresh coriander leaves) sajane ke liye

Vidhi (Instructions):

Ab, chaliye kathal ki sabji banane ki step-by-step vidhi par dhyan dete hain:

1. Ek kadhai mein tel garam karein, medium aanch par. Usmein jeera dalein aur usse crackle hone dein.

2. Ab barik kaati hui pyaaz ko dalein aur use sunehre rang tak bhun lein.

3. Adrak-lehsun ka paste aur kati hui hari mirch ko dal kar, aur ek minute tak bhunein takleef aur sugandh nikalne tak.

4. Ab tamatar ka paste daalein aur masalon se alag hone tak pakayein.

5. Aanch ko kam kar dein aur haldi powder, lal mirch powder, dhaniya powder aur namak dal dein. Achhe se milayein, taaki masale sahi tarah se sabji mein chipak jayein.

6. Kathal ke tukde ko kadhai mein dalein. Halki aanch par milayein, taaki masale ka swaad kathal ke saath acche se mil jayein.

7. Kadhai ko dhak kar kathal ko 15-20 minute tak dheeme aanch par pakayein. Isse kathal masalon ko acche se absorb karega aur komal hone tak pak jayega.

8. Bich bich mein halka halka hilate rahein, taaki masale kadhai ke neeche chipakna na shuru ho jaye. Zarurat padhe toh thoda sa paani sprinkle karke desired consistency banayein.
