Haldi ki sabji, yaani turmeric curry, ek swadisth aur poshtik dish hai jise kuch simple ingredients se taiyar kiya ja sakta hai. Yahaan ek full recipe hai jo aapko iss process mein madad karegi:
Haldi Ki Sabji – Samaagri:
– 2 cup taza haldi ka gath, chhilke saaf karke chote tukdon mein kaat lijiye
– 2 medium size pyaaz, bareek kata hua
– 2 medium size tamatar, bareek kata hua
– 2 hari mirch, lambai mein kaati hui
– 1 chammach adrak, kaddukas kiya hua
– 1 chammach lehsun, barik kata hua
– 1 chammach jeera
– 1 chammach sarson ke beej
– 1/2 chammach haldi powder
– 1/2 chammach laal mirch powder (swaad anusaar badhaava de)
– 1/2 chammach dhaniya powder
– 1/4 chammach garam masala powder
– Namak swaad anusaar
– Taaze dhaniye ke patte, sajane ke liye
– 2 chammach cooking oil
Vidhi:
1. Ek pan ya kadai ko medium aanch par garam karein. Usmein jeera aur sarson ke beej daalein. Unhein phoolne dein.
2. Kata hua pyaaz ko daalein aur tab tak bhunein jab tak woh translucent ho jayein aur halka golden ho jayein.
3. Adrak, lehsun aur kati hari mirch daalein. Ek minute tak bhunein jab tak kacha gandh na rahein.
4. Kata hua tamatar daalein aur pakne tak bhunein jab tak woh mulayam aur mashed ho jayein.
5. Ab, taza haldi ko daalein aur acche se milayein. Kuch minute tak bhunein jab tak haldi thodi naram na ho jaye.
6. Haldi powder, laal mirch powder, dhaniya powder aur namak daalein. Milayein taaki haldi aur anya samagri acche se masalon se cover ho jaye.
7. Aanch ko dhimi kar dein, pan ko dhak dein aur haldi ko 10-15 minute tak ya jab tak woh naram na ho jaye, pakne dein. Thhodasa thhodasa hilate rahein, jisse woh chipakne ya jalne se bach sakein.
8. Jab haldi pak jaye aur naram ho jaye, upar se garam masala powder chirak dein aur ek baar mila lein.
9. Aanch se hatakar haldi ki sabzi ko ek serving dish mein nikal dein.
10. Taza dhaniye ke patte se sajayein.
