Palak Ki Sabji – Samagri:

Swadisht palak ki sabji banane ke liye, neeche diye gaye samagri ki zarurat hogi:

– 2 guchche taaza palak ke patte

– 2 aadhe size ke pyaaz, barik kata hua

– 2 tamatar, barik kata hua

– 2 hari mirch, lambai mein kati hui

– 2 chammach adrak-lasoon ka paste

– 1 chammach jeera

– 1 chammach haldi powder

– 1 chammach lal mirch powder

– 1 chammach dhaniya powder

– 1/2 chammach garam masala

– Namak swaad anusar

– 2 chammach tel ya ghee (pakane ke liye)

Vidhi:

1. Palak ke patte ko thande pani se acche se dhoye. Unhein ubalte hue paani mein lagbhag 2 minute ke liye daal dein. Paani nikal dein aur turant palak ko barf se bhare hue paani wale bartan mein daal dein. Yeh prakriya palak ki hare bhare rang ko qayam rakhti hai. Palak ko thanda hone ke baad ache se chaan lein aur usko smooth paste bana lein. Side mein rakh dein.

2. Ek kadhai mein tel ya ghee ko medium aanch par garam karein. Usmein jeera daal kar tadka lagayein. Fir, barik kata hua pyaaz daal kar use sunahre rang tak bhunein.

3. Kadhai mein adrak-lasoon ka paste daal dein aur ek minute tak pakayein, jab tak gandh ka asar na rahe.

4. Kati hui hari mirch aur kata hua tamatar daal dein. Achhe se milayein aur tamatar naram aur gholi ho jayein tak pakayein.

5. Haldi powder, lal mirch powder, dhaniya powder aur namak daal dein. Masale ko pyaaz-tamatar mixture ke saath milayein aur ache se mix karein.

6. Palak ka paste dalein aur sab kuch achhe se milayein. Mixture ko kuch minute tak halki aanch par pakne dein, takki swad achhe se ghul jayein.

7. Garam masala ko curry par chhidak dein aur ek baar milayein. Consistency ko apne pasand ke hisab se paani daal kar adjust karein.

8. Kadhai ko dhak kar palak ki sabji ko kam aanch par lagbhag 5-7 minute tak pakne dein, taaki swadon ka mel ho sake.

9. Dhakkan hatakar halki si milayein aur swad anusar namak aur masale ko check karein. Zarurat padne par namak aur masalon ko adjust karein.

10. Palak ki sabji ko ek serving bowl mein nikal lein. Garam-garam roti, naan ya uble chawal ke saath serve karein.
