Dhokla Banane Ki Vidhi – Samagri:
Dhokla Batter ke liye:
– 1 cup besan (gram flour)
– 1/2 cup sooji (semolina)
– 1/4 cup dahi
– 1/2 chammach adrak paste
– 1/2 chammach hari mirch paste
– 1 chammach nimbu ka ras
– 1/2 chammach haldi powder
– 1 chammach namak, swaad anusaar
– 1 chammach cheeni
– 1 cup paani
– 1 chammach Eno fruit salt
Tadka ke liye:
– 2 tablespoon tel
– 1 chammach rai
– 1 chammach til
– 1 sprig kadi patta
– 2-3 hari mirch, lambi cut
– Ek pinch hing (asafoetida)
– 1/4 cup paani
– 1 tablespoon cheeni
– 2 tablespoon nimbu ka ras
– Taze dhaniye patti, barik kata hua (garnish ke liye)
Vidhi:
1. Ek bade bartan mein besan, sooji, dahi, adrak paste, hari mirch paste, nimbu ka ras, haldi powder, namak aur cheeni ko achhe se milaye. Acchi tarah se mix karein.
2. Dhire-dhire pani daal kar milate rahein aur smooth batter banane ke liye whisk karein. Isse thodi der ke liye rakh dein, taaki batter thoda ferment ho jaye.
3. Jab tak batter ferment ho raha hai, steamer ko tayyar karein. Ek steamer pot ya bada bartan lein aur usmein paani daal kar medium aanch par garam karein. Ek round ya square baking dish ko ghee se grease karein, jo steamer mein fit ho jaye.
4. Fermentation ka samay pura hone ke baad, batter ka consistency check karein. Agar zyada gadha lag raha hai, toh thoda aur pani milayein aur adjust karein.
5. Steam karne se pehle, batter mein Eno fruit salt daal kar halka mix karein. Batter foamy ho jayega, yeh leavening agent activate hoga.
6. Turant batter ko greased baking dish mein daal dein. Dish ko steamer mein rakhein, ek dhakkan se cover karein aur lagbhag 15-20 minutes tak steam karein, ya jab tak dhokla puri tarah se pak jaye. Dhokla pak gaya hai ya nahi check karne ke liye, toothpick ko dhokle mein daal dein. Agar saaf nikalta hai, toh taiyaar hai.
